Scottish Honey Bread
Seasonal Vegetarian, Dairy free, Egg free recipe
Lovely sweet bread made with Scottish flour and Scottish local honey.
Preparation
Mix the yeast and honey with water until diluted. Add salt to the flour and pour onto a cold surface. Make a well in the centre of the flour and gradually pour the liquid into the flour to make a dough. Knead the dough until smooth. Cover with a damp cloth or put the bowl into a plastic bag, keep it in a warm place and proof the dough until it doubles in size.
Knead the dough again and put into a bread tin. Again, cover it or put it in a plastic bag, leave in a warm place until it doubles in size. Place the loaf into a hot oven (200C) with a tray of water in the bottom of the oven and bake for 45 minutes.
The loaf is cooked when you can hear a hollow sound when you tap it. Leave the loaf on the cooking tray to cool.

- 1 kg Mungo's Wells Strong White Flour
- 500g tepid water
- 80g Fresh yeast
- Pinch salt
- 2 – 3 tbsp Scottish Heather Honey
