Vegan Carrot Hotdog

What a fun recipe and good way to introduce kids to vegan foods! And very tasty too, if I may say so!!
Preparation
Cook the carrots for around 6 – 10 minutes until tender. The cooking time depends on how crunchy you like your ‘carrot hotdog’. Make a marinade of the apple cider vinegar, soya sauce, onion granules, paprika powder and olive oil. Toss in the carrots and leave to marinate for 24 hours in a fridge. Turn the carrots after 12 hours.
Cut open each roll. Add one marinated carrot. Combine the onion and gherkins and add to the rolls. Top with ketchup and mustard and enjoy!

- 8 carrots, hotdog size
- 30 ml apple cider vinegar
- 50 ml shoyu sauce
- 1 tbsp olive oil
- 1 tsp onion granules
- 1 tsp paprika powder
- 1 small red onion, chopped
- 4 tbsp pickled gherkins, roughly chopped
- 2 tbsp ketchup
- 1 tbsp mustard
- 8 (hotdog) rolls
