Dutch Salad of the Hussars
Seasonal Vegetarian, Gluten free recipe
This is an authentic Dutch recipe, called Huzarensalade, and is very popular in our household. It is made with potatoes, gherkins and lots of mayonnaise.
Preparation
Boil the potatoes for around 15 -25 minutes until they are ready, the boiling time depends on the type of potato and it is best to test if they are ready by pricking in a potato cube after 15 minutes to see if it is soft or if it needs longer. When ready, leave to drain and cool in a collander.
Chop the gherkins, apple and silverskin onions and add to the cooled potatoes. Add half of the mayonnaise and mix thoroughly until everything is coated with mayonaise.
Crumble the boiled egg by either using the back of a fork, or by chopping it up finely.
Dress a large serving plate with lettuce leaves and put the salad in the middle. Cover the top with the rest of the mayonnaise.
Sprinkle the crumbled egg over the salad and dcorate the sides with either (or all): tomato slices, cucumber slices, sliced gherkins.

- 1 - 2 (Bramley) Apples
- 1 hard boiled egg
- 100g silverskin onions
- 150g gherkins
- 300g mayonnaise
- 1 Lettuce
- Gherkins, Tomatoes or Cucumber
