This seasonal recipe uses chard, but you can substitute it with spinach. Both should be available in September.
Eggs are a perfect substitute to meat.

Preparation

Wash the chard (or spinach), remove any ugly leaves and drain well and chop the chard.

Heat the oil in a large, wide pan and fry the chard, in batches if necessary, until it has reduced in size.
Add to an oven dish.

Beat together the eggs and the grated cheese. Sprinkle 1 tbsp of paprika over the chard.
Melt the butter and pour over the chard.

Make 4 little holes in the chard and pour in the egg mixture.

Bake in a 200C oven for around 20 - 30 minutes until the egg has set.

Serve with boiled potatoes.
