Seaweed Salad with Tofu
Seasonal Vegan, Vegetarian, Gluten free, Dairy free, Egg free recipe
Please note: due to the high iodine content of the seaweed, this recipe is not suitable for people on thyroid medication.
Preparation
First make a marinade by combining the chopped stem ginger with the tamari sauce, sesame oil and chilli flakes to taste. Mix the tofu with the marinade and set aside.
Next soak the dulse seaweed in hot water for around 5 minutes.
After soaking and draining the dulse seaweed, add the cucumber, lime juice and spring onions and toss together
Heat a frying pan and without adding oil (this is already in the marinade).Cover the tofu slices with the sesame seeds and fry in the hot pan until crispy.
Serve the tofu with the seaweed salad and gluten free noodles.

- ½ bag Organic Dulse (seaweed)
- 4tbsp Meridian tamari soy sauce
- 1 piece of stem ginger, chopped
- Plain Tofu cut into cubes
- 1 chilli pepper
- 1 cucumber (sliced)
- 1 lime (juice only)
- 2 spring onions (sliced)
- 2 tbsp sesame oil
- 30g Suma sesame seeds
- Gluten free rice noodles
