A delicious vegan recipe with seasonal tomatoes and soya mince for extra protein.

Preparation

Start by rehydrating the Clearspring soya mince; just add boiling water and soak for 10 minutes, drain and squeeze out any excess water.

To cook the couscous: add the boiling water to the couscous and leave until the water has been absorbed.
Remove the seeds from the sweet pepper and cut into slices or chunks.

Heat the oil in a frying pan and fry the rehydrated soya mince, the onion and garlic for around 10 minutes. Mix in the tomatoes and chilli powder and heat through.

Serve the couscous with the tomato sauce on top.

  • 300 g couscous
  • 150 ml boiling water
  • 1 onion, peeled and chopped
  • 1 yellow sweet pepper
  • 150 g Clearspring soya mince
  • 2 cloves garlic, peeled and crushed
  • 3 tbsp olive oil
  • 400 g tomatoes, chopped
  • ½ tsp chilli powder
