Falafel
Seasonal Vegan, Vegetarian, Gluten free, Dairy free, Egg free recipe
Falafel is made from chickpeas and spices. Traditionally served with houmous and pita bread. Add some lettuce, tomato or cucumber salads to make a nutritious meal. It usually is vegan and vegetarian and when using Orgran bread crumbs, also gluten free.
Preparation
If using dried chickpeas:
soak the chickpeas overnight and cook for 1 - 1.5 hours.
Fry the cumin and coriander seeds in a dry pan until they start to crackle. Grind the seeds in a pestle and mortar (alternatively you can use ready ground cumin and ground coriander).
Put the chickpeas in a food processor and mash. Add all the other ingredients apart from the oil and mix well. You should get a nice even texture.
Take a small portion in your hand and form a ball. Repeat until the mixture is finished.
Fry the falafel in hot oil or brush the falafel with some oil and bake in an oven.
Serve with pita bread, lettuce, tomato and/or cucumber salad and homemade houmous (humus)

Ingredients
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- 2 cans chickpeas
- OR 300g dried chickpeas
- 1 green chilli pepper (or chilli powder according to taste)
- 1 red chilli pepper
- 1/2 tsp turmeric
- 2 cloves crushed garlic
- 400g breadcrumbs
- 1 good handful of fresh coriander coarsely chopped
- 1 good handful of fresh flat leaf parsley
- 1 small red onion, finely chopped
- juice of 1 lime
- oil for frying
