Spinach dal
Seasonal Vegan, Vegetarian, Gluten free, Dairy free, Egg free recipe
Spinach should be available from now on, as it is one of the first greens to grow.
Preparation
Melt Vegan Block in a pot and fry onions and ginger until they are soft.
Add tomato and boil until softened. Add water, if necessary.
Add turmeric, chili and coriander powder
Add lentils and water to cover
Add spinach
Leave to simmer for 12 minutes
Serve with rice and fresh coriander

- 1 onion, chopped
- 1 tbsp ground coriander

- 1 tbsp of fresh ginger, grated
- 1 tomato, chopped
- 2 tbsp turmeric powder
- Fresh coriander, chopped
- Salt
- Spinach, fresh or frozen, 3 handfuls
