A tasty breakfast with lots of goodness from the (frozen) blueberries, cottage cheese and eggs.

Preparation

Defrost the blueberries overnight if using frozen ones.

Mix the cottage cheese with the two medium eggs in a bowl. 

Add the flour to the bowl and mix gently.

Finally, add the blueberries to the bowl.

Heat the coconut oil in the frying pan and add the batter to the pan, dividing the mix into 4 portions.  Fry until golden on one side and then turn.  Allow the mix to turn golden on the other side.  Serve with the maple syrup and a cup of Grumpy Mule Sumatra Ground organic coffee.
