Shop's Celebration Cake
Vegan and gluten free chocolate cake
I made this vegan and gluten free cake for the shop's 30th Anniversary in 2018.
Preparation
In a kitchen machine, mix together the banana, sugar, oil and vanilla extract. Add the water and mix well until you have a smooth liquid.
Sieve the gluten free self-raising flour and the cocoa and add to the kitchen machine.
Mix until you have a nice, smooth mixture. If it's too wet add a little more flour, if it's too dry, you can add a little more water.
Bake in a 180C (gas mark 5) oven for around 30-40 minutes. But check after 30 minutes, if a wooden skewer comes out dry, it's ready.
Leave to cool on a rack.

- 130 ml water
- 150 ml safflower oil
- 2 tbsp cocoa
- 225 g sugar
- 260g gluten free self-raising flour
